Asian Chicken & Rice

I suppose you could call this Chinese chicken, but I have an Indonesian friend whose mom used to make it all the time. Here is my streamlined version.

Cook up a bunch of rice.

Mix up some chicken (I like chicken triangles, strips, fingers, or any of the pre-cooked, pre-breaded kind) and add these ingredients: red pepper (or green bell pepper if you don’t have red), pineapple pieces (get a can of pineapple, strain out the juice and use it for something else later). So, put all those 3 ingredients in equal parts, okay?

Add some chopped onion tops or chives, or whatever is oniony. Lacking any of those, sprinkle in some onion powder. Put in a few dashes of soy sauce. Put in a couple sprinkles (not much!) of the Cajun seasoning.

Okay, mix those ingredients with the rice in your mixing bowl.

Now, if you REALLY want to get fancy, sprinkle some sesame seeds on top. Now, that’s fancier than I usually go, but heck, it’s a tasty dish! You can probably get 2 servings out of this. Stick the rest in your refrigerator. It should keep 4 days.
