Easiest Soup

My housemate said he didn’t know how to make soup. I told him it’s easy. Today, not knowing what to eat, I looked in my freezer and picked out these:

  • Frozen chicken nuggets (pre-breaded)
  • Frozen Mixed Mediterranean veggies (cauliflower, broccoli, carrots, etc)
  • Brown rice

I put a pot of water on the stove, added the brown rice, and let it heat on high for 10 minutes. THEN, after 10 minutes I added the veggies and chicken nuggets. I let it cook 10 more minutes. Remember that brown rice takes 20 minutes to cook, unlike white rice which takes 10.

I scooped out half the soup into a bowl, and put the rest into one of my glass storage bowls, and put that part in the refrigerator. There was no seasoning in the soup yet except for what was on the chicken breading. So, I added a few shakes of my trusty Cajun seasoning. I mixed it up and ate. It was FABULOUS!

I was so excited about the soup that my camera hand was shaky! So, this is what it looked like after I turned off the burner. The pot, is, of course, the non-stick saucepan I recommend. It’s easy to cook in and super-easy to clean.
