If you buy your typical Jif, Skippy, and other regular brands you’re going to get hydrogenated vegetable oil, which is something nutritionists warn us about. The oil is blended in to make the peanut butter smooth, otherwise it’ll be oily on top and dry on the bottom. The other ingredient you want to watch is sugar. I have no idea why peanut butter makers insist on putting sugar in there, but they nearly all do.
Some companies have begun to offer natural peanut butters. This one from Smucker’s contains just peanuts and salt. I’m not sure how they manage to keep the oil from separating, but they do.
