Tuna is a good all-around thing to have in your cupboard. It’s cheap, it tastes good, and it’s good for you, as any fish is. I experiment with various kinds, depending what’s on the shelf at the store. Most Americans like albacore, but other kinds include Tongol, skipjack (usually called “light” tuna), and yellowfin. A lot of people like Tongol because it has the lowest level of mercury of any of the tunas. (All fish have some degree of mercury, usually naturally occurring, but also through industrial waste.)

Tongol tuna sells for about $2 a can, making it more expensive than albacore, but, well, it’s different. Many folks like it more than albacore.
